Winter Lamb Casserole

Winter Lamb Casserole (Pressure Cooker) Recipe

Preparation Time: 10 minutes

Cooking time: 15 minutes on high pressure

Ingredients:

  • 2 tablespoon cooking oil
  • One medium onion peeled and sliced
  • One medium parsnip peeled and cut into 2.5 cm cubes
  • One medium turnip  peeled and cut into 2.5 cm cubes
  • 2 medium carrots scraped and sliced thickly
  • 8 thin best end of neck lamb chops
  • One tablespoon tomato puree
  • 450 ml beef stock
  • 1/4 teaspoon mixed herbs dried
  • salt
  • freshly ground black pepper

Directions:

  1. Heat the oil in an open cooker
  2. Add the onion, parsnip, turnip and carrots and fry gently for around 2-3 minutes.
  3. Lift out and drain the vegetables.
  4. Add the chops to the cooker and wait until brown on all sides.
  5. Place the vegetables in the cooker and put the chops on top.
  6. Mix the tomato puree, herbs, stock, salt and pepper then pour it over the chops.
  7. Close the cooker bring it to high pressure and cook for 15 minutes.
  8. Reduce the pressure right away.
  9. Add seasoning, then serve the chops with the vegetables on the top.
