Vegetable Chop Suey

Vegetable Chop Suey (Pressure Cooker) Recipe

Preparation time: 8 minutes

Cooking time: 4 minutes on high pressure

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 medium onion, peeled and chopped
  • 1 red pepper, cored, seeded and sliced
  • 100 grams bean sprouts
  • 100 grams mushrooms, thickly sliced
  • 1 tablespoon soy sauce
  • 300 ml chicken stock
  • salt
  • freshly ground black pepper
  • 2 teaspoons cornflour
  • 1 tablespoon cold water

Directions:

  1. In an open cooker, heat the oil then add the celery, red pepper and onions. Fry it gently until the onion is transparent. Take out any excess oil.
  2. Add the mushrooms, bean sprouts, salt, stock and pepper. Continue to stir the mixture
  3. Close the cooker and place it under H pressure and let id cook for 4 minutes. Immediately reduce the pressure.
  4. Turn on the heat of the cooker. In cold water, add the corn flour and place it on the cooker whilst stirring. Simmer it until it thickens then add seasonings to taste.
  5. Serve it with either steaks or grilled chops.
