
Vegetable Casserole With Cheese Dumplings (Pressure Cooker) Recipe
Preparation time: 15 minutes
Cooking time: 3 minutes on high pressure , 10 minutes

Ingredients:
- 2 medium onions, peeled and chopped
- 6 carrots, scraped and sliced
- celery sticks, finely chopped
- 1 medium parsnip, peeled and cut into 1 cm cubes
- 1 small swede, peeled and cut into 1 cm cubes
- 450 ml beef stock
- 1 tablespoon tomato puree
- 1 teaspoon dried mixed herbs
- salt
- freshly ground black pepper
Dumplings:
- 100 grams self-raising flour
- 1/2 teaspoon salt
- 50 grams shredded beef suet
- 50 grams Cheddar cheese, finely grated
- 4 tablespoons water
To Serve:
- 1 tablespoon finely grated Cheddar cheese
- 1 tablespoon chopped fresh parsley
Directions:
- Place all the vegetables, tomato puree, stock, salt, pepper and
herbs in the cooker. Stir the mixture well.
- Close the cooker completely and bring it to H pressure and let
the mixture cook for three minutes
- Start to prepare the dumplings. Sieve the flour and then mix it
with salt in a bowl, then proceed to add the cheese and suet and
stir the mixture.
- Add water that will be enough to mix the dough completely.
Divide the dough in eight pieces and make them into balls.
- Reduce the cookers pressure and place the dumplings in the
cooking vegetables. Remove the weights of the cooker but do not
cover it completely.
- Simmer the food for roughly 10 minutes or until the dumplings
are well cooked and have risen.
- Serve the dumplings by sprinkling cheese and parsley and serve
it as the main meal.
