Tutti Frutti Bread Pudding (Pressure Cooker) Recipe
Preparation time: 20 minutes
Cooking time: 5 minutes on high pressure
Ingredients:
Eight slices of white bread, crusts removed
50 grams butter or margarine
215 grams sliced peaches, drained
25 grams glace cherries, chopped
50 grams seedless raisins
1/2 teaspoon ground cinnamon
Two eggs at least size 2
300 ml milk
Two tablespoons caster sugar
300 ml boiled water
vinegar or lemon juice
Directions:
Spread the butter or margarine to the slices of bread. Cut each
piece into quarters.
Grease a straight-sided ovenproof dish with a size that fits
with the cooker.
Place half of the bread into the dish. Cover with layer of half
the fruits and sprinkle over half of cinnamon. Repeat the layers,
making a pattern with the peach slices on top.
Mix the eggs with milk and one tablespoon of sugar. Pour it on
the bread and fruit and leave for 5 minutes to stand.
Cover with a foil or a greaseproof paper and securely tie it.
Place the trivet into the cooker, rim side down and pour in the
water and vinegar or lemon juice. Bring to boil then put the pudding
on the trivet.
Close the cooker, bring to high pressure and cook for 5 minutes
then reduce the pressure slowly.
Lift out the pudding from the cooker and remove the covering.
Sprinkle the top with remaining sugar and brown over a hot grill.
Serve either hot or cold. More delicious if served with whipped
cream.
