
Spiced Cabbage (Pressure Cooker) Recipe
Preparation time: 7 minutes
Cooking time: 4 minutes on high pressure
Ingredients:
- 25 grams butter or margarine
- 1 firm medium green cabbage, quartered and cored
- 1/2 teaspoon grated nutmeg
- 225 grams tomatoes, chopped with their juice
- 2 tablespoons demerara sugar
- 4 tablespoons water
- salt
- freshly ground black pepper
Directions:
- In the open cooker, melt the margarine or butter; add the
cabbage and the other ingredients then ad pepper and salt to taste.
- Bring the cooker to H pressure and let it cook for 4 minutes.
After the four minutes, reduce the pressure instantly.
- Remove the cabbage and keep in a serving dish that will keep the
food warm.
- Boil the sauce for 2 minutes, and then add the seasoning. Pour
the soup over the cabbage and close the serving dish to keep it warm.
