Lamb casserole is a hearty meal that mixes the flavors of lamb meat, vegetables and rich stock all in one pot. Everything takes 10 minutes to prepare.
Ingredients
750g (or ¾ kilo) lamb cut into large cubes
4 carrots quartered lengthwise
4 sliced potatoes
2 quartered white onions
whole cloves
freshly-chopped rosemary
1 ½-2 cups stock
½ cup dry white wine
salt and pepper
chopped fresh parsley
2 tablespoon flour
Water
½ cup cream
Directions
Place all ingredients into the pressure cooker. Set the timer, according to your cooker’s instructions.
Once cooker reaches full pressure, reduce it to #6 or 7. Cook for 20 minutes.
Reduce steam, following normal procedures from your cooker manual.
Make thickener by blending flour, water and cream in a small bowl.
In a separate saucepan, heat some liquid from the pressure cooker and add the thickener, whisking the mixture until smooth. Remove from heat and add cream.
Spoon creamy mixture onto serving plates. Sprinkle with parsley and serve for 4 people.
