
Poulet Citron (Pressure Cooker) Recipe
Preparation time: 10 minutes plus
marinating time
Cooking time: 6 minutes on high pressure
Ingredients:
- Four pieces chicken breasts, skinned
- One clove garlic, peeled and crushed
- One medium sized onion, peeled and chopped
- One or two lemons, finely grated rind and juice
- One tablespoon fresh parsley, chopped
- Two tablespoon olive oil
- salt
- freshly ground black pepper
- 50 grams butter
- 300 ml chicken stock
- One tablespoon plain flour
To Garnish:
- One lemon (sliced)
- One teaspoon chopped fresh parsley
Directions:
- In a large bowl, put the chicken, lemon rind and juice, onion
parsley, oil and salt.
- Add pepper to taste.
- Cover the bowl and marinate for around 4 hours.
- Stir the ingredients thoroughly.
- In an open cooker melt 25 grams of butter. Strain and keep the
marinade liquid.
- Put the chicken breast and vegetables to the cooker and cook
until browned.
- Add the marinade liquid, stock, salt and pepper then stir
thoroughly.
- Cover the cooker and bring to high pressure. Cook the
mixture for around 6 minutes then reduce the pressure right away.
- Lift out the chicken and place it on a serving dish. Keep it
hot.
- Heat up the open cooker and mix the remaining butter with the
flour to make a paste.
- Stir into the sauce in small pieces.
- Cook and stir thoroughly until the sauce thickens.
- Taste and adjust the seasoning.
- Put the sauce over the chicken and garnish with lemon wedges and
chopped parsley.
