Portuguese Cabbage and Potato Soup (Pressure Cooker) Recipe
Preparation time: 10 minutes
Cooking time: 5 minutes on high pressure
Ingredients:
2 tablespoons olive oil
3 medium potatoes, peeled and sliced
1 medium onion, peeled and chopped
1 small green cabage, cored and finely shredded
900 ml chicken stock
salt
freshly ground black pepper
Directions:
Heat the oil in the open cooker. Add the potatoes and onion and
fry until the onion is transparent.
Add the cabbage, reserving 2 tablespoons for the garnish. Cook
until the cabbage W beginning to soften.
Stir in the stock and salt and pepper to taste.
Close the cooker, bring to high pressure and cook for 5 minutes.
Reduce the pressure quickly.
Puree the soup in a blender or press through a sieve.
Return the soup to the open cooker and add the reserved shredded
raw cabbage. Bring to the boil and simmer, stirring occasionally,
for 3 minutes. Taste and adjust the seasoning before serving.
