Pork and Bean Hotpot

Pork and Bean Hotpot (Pressure Cooker) Recipe

Preparation time: 15 minutes plus soaking time

Cooking time: 15 minutes on high pressure

Ingredients:

  • 75 grams dried haricot beans
  • 2 tablespoons oil
  • 1 large onion, peeled and sliced
  • 2 large carrots, scraped and sliced
  • 450 grams boned pork shoulder, trimmed of excess fat and cut into 2.5 cm cubes
  • 2 tablespoons tomato puree
  • 1 teaspoon dried mixed herbs
  • 450 ml beef stock
  • salt
  • freshly ground pepper

Directions:

  1. Soak the haricot beans in boiled water in a covered bowl.
  2. Leave it to soak for an hour and drain well when ready to use.
  3. Heat the oil in the cooker and fry the onion and carrots until lightly brown. Remove from the cooker and drain well of oil.
  4. Brown all sides of the pork in the cooker. Remove the excess oil from the cooker after browning meat.
  5. Put the vegetables back to the cooker and add the tomato puree, herbs, stock, salt and pepper to taste.
  6. Add in the beans and stir.
  7. Cook for 15 minutes on high pressure with the cooker closed.
  8. Taste and add seasoning if needed.
