
Pork and Bean Hotpot (Pressure Cooker) Recipe
Preparation time: 15 minutes plus soaking
time
Cooking time: 15 minutes on high pressure
Ingredients:
- 75 grams dried haricot beans
- 2 tablespoons oil
- 1 large onion, peeled and sliced
- 2 large carrots, scraped and sliced
- 450 grams boned pork shoulder, trimmed of excess fat and cut
into 2.5 cm cubes
- 2 tablespoons tomato puree
- 1 teaspoon dried mixed herbs
- 450 ml beef stock
- salt
- freshly ground pepper
Directions:
- Soak the haricot beans in boiled water in a covered bowl.
- Leave it to soak for an hour and drain well when ready to use.
- Heat the oil in the cooker and fry the onion and carrots until
lightly brown. Remove from the cooker and drain well of oil.
- Brown all sides of the pork in the cooker. Remove the excess oil
from the cooker after browning meat.
- Put the vegetables back to the cooker and add the tomato puree,
herbs, stock, salt and pepper to taste.
- Add in the beans and stir.
- Cook for 15 minutes on high pressure with the cooker closed.
- Taste and add seasoning if needed.
