Pears in Port (Pressure Cooker) Recipe

Preparation Time: 10 minutes plus chilling time

Cooking Time: 6 minutes on High pressure

Ingredients:

  • Four dessert pears, with stalks
  • finely grated rind and juice of two lemons
  • Six tablespoons port
  • Six tablespoons water
  • Six tablespoons sugar

Directions:

  1. Allow 8 minutes of cooking on high pressure, if using cooking pears for this recipe.
  2. Peel the pears carefully while leaving the stalks intact.
  3. Place the lemon rind and juice, water, port and sugar into the cooker. Stir well.
  4. Allow the pears to stand in the cooker and lift out the liquid over them.
  5. Close the cooker and bring the pressure on high. Cook for 6 minutes then reduce the heat right away.
  6. Lift out the pears carefully and place them in a serving dish.
  7. Bring the open cooker back to heat and boil the liquid for 2-3 minutes.
  8. Pour the liquid over the pears and chill.
  9. Apply the whipped cream and serve.
