
Pears in Port (Pressure Cooker) Recipe
Preparation Time: 10 minutes plus chilling time
Cooking Time: 6 minutes on High pressure
Ingredients:
- Four dessert pears, with stalks
- finely grated rind and juice of two
lemons
- Six tablespoons port
- Six tablespoons water
- Six tablespoons sugar
Directions:
- Allow 8 minutes of cooking on high pressure, if using cooking
pears for this recipe.
- Peel the pears carefully while leaving the stalks intact.
- Place the lemon rind and juice, water, port and sugar into the
cooker. Stir well.
- Allow the pears to stand in the cooker and lift out the liquid
over them.
- Close the cooker and bring the pressure on high. Cook for 6
minutes then reduce the heat right away.
- Lift out the pears carefully and place them in a serving dish.
- Bring the open cooker back to heat and boil the liquid for 2-3
minutes.
- Pour the liquid over the pears and chill.
- Apply the whipped cream and serve.
