
Orange Sponge Pudding (Pressure Cooker) Recipe
Preparation time: 20 minutes
Cooking time: steaming 15 minutes then 30 minutes cooking time
on low pressure
Ingredients:
- 100 grams butter or margarine
- 100 grams caster sugar
- Two eggs, beaten
- 150 grams sifted self-raising flour
- finely grated rind and juice of one orange
- Two tablespoons orange marmalade
- 900 ml boiling water little lemon juice or vinegar
Directions:
- Mix the margarine or butter with sugar until light and fluffy.
Beat in the eggs.
- Fold in the flour with orange rind and juice.
- Grease a 900 ml pudding basin. Place the marmalade in the bottom
and cover with the sponge mixture.
- Cover the pudding with a thick greaseproof paper or a piece of
greased foil then tie on securely.
- Place the trivet in the cooker, rim side down and pour in the
water and vinegar or lemon juice. Bring to boil then put the pudding
on the trivet.
- Steam the pudding for 15 minutes. Bring the pressure to low.
Cook for 30 minutes then reduce the heat right away.
- Lift out the pudding and place it on a heated serving dish.
- It's more delicious if served with hot custard.
