Old-fashioned Apple Pudding (Pressure Cooker) Recipe
Ingredients:
100 grams self-raising flour
100 grams white breadcrumbs, fresh
100 grams shredded suet
Two teaspoons caster sugar
150 ml cold water
450 grams thinly sliced cooking apples, peeled and cored
50 grams sultanas
finely grated rind and juice of one lemon
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
Two tablespoons demerara sugar
900 ml boiling water
vinegar or lemon juice
Directions:
Sift the flour into a bowl. Stir in the breadcrumbs, suet and
caster sugar. Add enough amount of cold water to make a smooth
dough.
Place the dough into a floured surface and knead lightly. Take
two-thirds of dough and roll it out into a round large enough to
line a greased 900 ml pudding basin.
Mix the apples, lemon rind, sultanas, cinnamon, nutmeg and
demerara sugar. Place it into the basin and press down well.
Roll out the remaining dough to form a lid. Dampen the edges and
place over the filling. Press the edges well to seal.
Cover with a thick greased greaseproof paper or a piece of
greased foil then tie securely.
Put the trivet into the cooker, rim side down then pour in the
boiling water, vinegar and lemon juice. Bring to boil then place the
pudding on the trivet.
Close the cooker and steam for 15 minutes. Raise the heat and
bring the pressure to low. Cook for 35 minutes then reduce the heat
right away.
Lift out the pudding and place it on a heated serving dish.
