
Moules Mariniere (Pressure Cooker) Recipe
Preparation time: 30 minutes
Cooking time: 1 minute on high pressure
Ingredients:
- 1 and 1/2 kilograms of fresh mussels
- 1 medium size onion (peeled and finely chopped)
- 2 gloves of garlic (peeled and crushed)
- 2 fresh thyme sprigs
- 2 stalks parsley
- 300 ml of dry white wine
- freshly ground black pepper
- 2 tablespoons of chopped fresh parsley
Directions:
- Wash and scrub mussels under running water. Remove the beard of
the mussels. Throw away any open or broken mussels.
- Place the mussels, onion, garlic, herbs, wine and pepper in a
cooker.
- Cook for 1 minute with the cooker closed. Reduce the heat
immediately.
- Remove the mussels from the cooker and place them in a large
heated serving dish. Remove the top half of the shells.
- Throw away any mussels that have not opened after cooking.
- With the liquid still in the cooker, remove the herb stalks and
let it boil for 2 minutes.
- Taste and add seasoning if desired.
- Add the chopped parsley and pour over the mussels. Serve
immediately.
