
Mixed Bean Casserole (Pressure Cooker) Recipe
Preparation time: 6 minutes plus soaking
time
Cooking time: 20 minutes on high pressure
Ingredients:
- 100 grams dried red kidney beans
- 100 grams dried white haricot beans
- 100 grams dried chick peas
- 1 litre boiling water
- 1 tablespoon vegetable oil
- 1 large onion, peeled and chopped
- 1 green pepper, cored, seeded and chopped
- 3 tablespoons tomato puree
- 750 ml beef stock
- 2 tablespoons demerara sugar
- 1 teaspoon dry mustard
- freshly ground black pepper
- salt
- chopped fresh parsley, to garnish
Directions:
- Put all the beans Ina large bowl. Cover with the boiling water
and leave to soak for 1 hour. Drain well.
- Heat the oil in the open cooker. Add the onion and green pepper
and fry until the onion is transparent.
- Add the beans with the tomato puree, stock, sugar, mustard and
pepper to taste and stir well.
- Close the cooker, bring to H pressure and cook for 20 minutes.
Reduce the pressure slowly.
- Taste and adjust the seasoning, adding a little salt. Sprinkle
with parsley before serving as an accompanying vegetable.
