Just like preparing the old-fashioned meat loaf, you’ll arrange the meat
in the morning, chill it to firm and cook it for your warm supper.
However, despite the extra time needed in preparing this dish, this is
one of the tasty pressure cooker beef recipes. This dish is also
kid-friendly, so it’s guaranteed to be a hit with your kids. This
pressure cooker meat loaf recipe serves four people.
Ingredients:
1 & 1/2 pound ground or chopped beef
1 teaspoon salt
Ground black pepper
1 medium-sized onion, minced
1 garlic clove
2 slices bread
2 tablespoon parsley
1 Egg
2 tablespoon homemade chicken stock
2 teaspoon Worcestershire Sauce
2 tablespoon olive oil
1 cup Tomato Sauce
1 cup Water
Directions:
In a bowl, combine the meat, salt and pepper, garlic, parsley,
onion, egg, Worcestershire sauce and chicken stock. Soak the 2
slices of bread in water, squeeze dry and add to the mixture.
Shape the meat into two small loaves, wrapping each in wax
paper.
Chill for several hours to firm.
When the meat loaves have firmed up, heat oil in the pressure
cooker and brown the loaves on all sides. When done, transfer the
loaves to the cooker’s basket.
Set the oil aside and combine water with tomato sauce. Season
the mixture a dash of salt and pepper. Spread it over the meat
loaves.
Lower the basket into the pressure cooker, lock lid and bring to
pressure. After about 10 minutes, lower heat and cook for 15 minutes
over high pressure.
Release pressure using the ‘quick release’ method. Slice meat
and serve.
