
Italian Vegetables (Pressure Cooker) Recipe
Preparation time: 20 minutes
Cooking time: 3 minutes on high pressure
Ingredients:
- 2 tablespoons vegetable oil
- 1 medium onion, peeled and chopped
- 1 garlic clove, peeled and crushed
- 4 courgettes, cut into 2.5 cm pieces
- 1 small cauliflower, divided into large florets
- 4 tomatoes, skinned and quartered
- 150 ml chicken stock
- 1/2 teaspoon dried oregano
- salt
- freshly ground black pepper
Directions:
- In an open cooker, heat the oil then add the garlic, onion and
courgettes and fry till light brown. If there is any excess oil,
drain it off.
- Add the tomatoes, stock, salt, herbs and cauliflower. Add pepper
to taste and stir the mixture.
- Close the cooker, place it under H pressure and let it cook for
3 minutes then turn off the cooker immediately.
- Remove the vegetables and place in a serving dish that will keep
the food warm.
- Switch on the cooker and boil the liquid for a few minutes and
pour it on the vegetables. You can serve it as an accompaniment to a
main meal.
