Italian Vegetables (Pressure Cooker) Recipe

Preparation time: 20 minutes

Cooking time: 3 minutes on high pressure

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 medium onion, peeled and chopped
  • 1 garlic clove, peeled and crushed
  • 4 courgettes, cut into 2.5 cm pieces
  • 1 small cauliflower, divided into large florets
  • 4 tomatoes, skinned and quartered
  • 150 ml chicken stock
  • 1/2 teaspoon dried oregano
  • salt
  • freshly ground black pepper

Directions:

  1. In an open cooker, heat the oil then add the garlic, onion and courgettes and fry till light brown. If there is any excess oil, drain it off.
  2. Add the tomatoes, stock, salt, herbs and cauliflower. Add pepper to taste and stir the mixture.
  3. Close the cooker, place it under H pressure and let it cook for 3 minutes then turn off the cooker immediately.
  4. Remove the vegetables and place in a serving dish that will keep the food warm.
  5. Switch on the cooker and boil the liquid for a few minutes and pour it on the vegetables. You can serve it as an accompaniment to a main meal.
