Hungarian Meatballs and Potato Casserole

Hungarian Meatballs and Potato Casserole (Pressure Cooker) Recipe

Preparation Time: 25 minutes

Cooking time: 4 minutes on high pressure

Ingredients:

  • 750 grams minced beef
  • 50 grams fresh white breadcrumbs
  • 1 small onion, peeled and grated
  • 2 teaspoons paprika
  • 2 teaspoon grated nutmeg
  • salt
  • freshly ground black pepper
  • 1 egg, beaten
  • 2 tablespoons oil
  • 400 grams can tomatoes, chopped, with their juice
  • 300 ml beef stock
  • 450 grams potatoes, peeled and cut into 25 grams pieces

Directions:

  1. Mix the minced beef, breadcrumbs, onion, paprika, nutmeg, and salt and pepper to taste. Bind with the beaten egg.
  2. Shape into balls by turning out on a floured surface.
  3. Heat oil in a cooker and brown the beef on all sides.
  4. Drain off any excess oil from the pan and put all the meatballs back adding the tomatoes, stock, potatoes.
  5. Season with salt and pepper and stir.
  6. Allow it to cook for 4 minutes on High pressure on a closed cooker. Minimize the heat immediately.
  7. Taste and add seasoning if desired before serving.
