Corned Beef with Vegetables Pressure Cooker Recipe
A kid-friendly, dairy-free and healthy beef recipe for your pressure
cooker, the beef casserole is a traditional one-pot meal that has been
adapted for the pressure cooker. To make this flavorful dish, you can
choice from shin or chuck beef. This recipe cooks for about an hour
using the pressure cooker. It serves 4 to 6 people.
Ingredients:
1/4 cup oil
4 large onions
1 kilo braising beef, cut into 3-centimeter cubes
1 tablespoon flour
1 cup of red wine
2 garlic cloves, finely chopped
3 or 4 sprigs of thyme
1 bay leaf
Dash of Salt
black pepper, preferably freshly-ground
½ kilo baby potatoes
3 medium-sized carrots
A small basket of cherry tomatoes
Freshly chopped parsley (for garnish)
Directions:
Heat 1/8 cup of oil in the pressure cooker over medium-high
heat.
Brown onions. When they turn golden brown, remove from the
cooker and set aside in a small plate.
Add the other 1/8 cup of oil. Brown the beef cubes in two or
three batches over medium-high heat.
Once all batches of beef are browned, return all the beef to the
cooker, sprinkling a dash or two of flour. Cook for two to three
minutes while stirring.
Add wine, herbs and garlic. Add a dash of salt and pepper, or to
taste.
Close lid and lock securely. Bring cooker to low pressure over
high heat.
Reduce the heat to stabilize pressure once low pressure has been
reached. Cook for 20 minutes.
Remove cooker from the heat and release the pressure using
cold-water or quick-release method.
Uncover and add the potatoes. Quickly cover and bring the cooker
back to low pressure over high heat.
Repeat step 7, but cook for another 10 minutes.
Repeat step 8.
Uncover and add carrots, tomatoes and the browned onions.
Repeat step 7, but cook for only five minutes.
Repeat step 8.
Remove the lid. Make sure to check if everything is cooked and
tender.
