
Continental Liver Casserole (Pressure Cooker) Recipe
Preparation time: 15 minutes
Cooking time: 6 minutes on high pressure
Ingredients:
- Two tablespoons oil
- One medium sized onion, peeled and chopped
- One clove of garlic, peeled and crushed
- 25 grams plain flour
- Salt
- Freshly ground black pepper
- 750 grams pig's liver, sliced into 1 cm.
- 400 grams tomatoes, canned
- 300 ml brown stock
- One tablespoon dried basil
- 100 grams packet frozen whole French beans, thawed and cut into
2.5 cm pieces
Directions:
- Heat oil in an open cooker.
- Place the onion and garlic in the cooker and fry. Lift them out
and drain well.
- Mix the salt and pepper to the flour and use it to coat the
liver.
- Place the liver to the cooker and brown on both sides.
- Remove the cooker from the heat, then bring the onions and
garlic back, add the tomatoes, beans, basil and stock.
- Add a little amount of salt and pepper then stir.
- Close the cooker, bring to high pressure and cook for 6 minutes
then reduce the pressure right away.
- Add the seasoning and adjust the taste.
- Serve with noodles.
