
Continental Bean Salad (Pressure Cooker) Recipe
Preparation time: 10 minutes
Cooking time: 15 minutes on high pressure
Ingredients:
- 175 grams haricot beans, dried
- 175 grams red kidney beans, dried
- 900 ml cold water
- One medium sized onion, peeled and chopped
- One small green pepper, cored, seeded and chopped
- 100 grams garlic sausage or salami cut into 1 cm cubes
- Three tablespoons olive oil
- One tablespoon wine vinegar pinch of dried mixed herbs
- Sixteen green olives, stuffed
- salt
- ground black pepper, fresh
Directions:
- Place the beans into a large bowl, pour it with boiling water
and soak for 1 hour. Drain well and discard the water.
- Transfer the beans to the cooker and add the cold water.
- Close the cooker and bring the pressure to high. Cook for 15
minutes then reduce the pressure right away.
- Drain the beans well and transfer them to a serving dish. Stir
in all the remaining ingredients, season with salt and pepper to
taste.
- Serve immediately.
Note: If you are making this dish in advance, do not add the vinegar
and oil until before serving.
