
Beef with Madeira and Mushroom Sauce (Pressure Cooker) Recipe
Preparation Time: 7 minutes plus marinating time
Cooking Time: 30 minutes on high pressure
Ingredients:
- 40 g butter
- 1 kg topside of beef
- 1 medium onion, chopped and peeled
- 175 g button mushrooms, sliced
- 300 ml Madeira
- 150 ml water
- salt
- freshly ground black pepper
- 2 teaspoon plain flour
- few fresh parsley springs
Directions:
- Melt half of the butter in the cooker.
- Brown the beef well on the butter and drain well after browning.
- Saute the onion and 100 g of mushroom to the cooker until onions
are a bit brown.
- Add in the browned meat, Madeira and water.
- Season with salt and pepper.
- Close the cooker and cook for 30 minutes on High. Reduce heat
when cooked.
- Remove the beef, keep hot while set aside.
- Make a paste by mixing the remaining butter and four and
gradually add to the sauce.
- Allow to simmer, stirring constantly until the sauce to
thickens.
- Add the remaining mushrooms and add seasoning if desired.
Continue to simmer for 2 minutes.
- Sliced the beef thickly and arrange on a serving dish.
- Pour the mushroom sauce on the meat and garnish with parsley
sprigs.
