Beef Marinated in Wine

Beef Marinated in Wine (Pressure Cooker) Recipe

Preparation time: 15 minutes

Cooking time: 20 minutes on high pressure

Ingredients:

  • 750 grams chuck steak, trimmed of excess fat and cut into 2.5 cm cubes
  • 1 large onion (peeled and sliced)
  • 1 clove garlic (peeled and crushed)
  • 1/2 teaspoons olive oil
  • 300 ml red wine
  • 50 grams butter
  • 1 tablespoons tomato puree
  • 150 ml brown stock
  • salt
  • freshly ground pepper
  • 1 tablespoons plain flour

Directions:

  1. In a mixing bowl, mix the meat cubes, onion, garlic, thyme, olive oil and 150 ml red wine. Stir well, cover and marinate for several hours.
  2. Melt the butter in a cooker.
  3. Drain the marinated meat. Set aside the marinade.
  4. Fry the meat on the butter until lightly brown.
  5. Mix in the marinade , the remaining half of the wine, tomato puree and stock.
  6. Season with salt and pepper stirring well.
  7. Close the cooker and allow to cook for 20 minutes on high.
  8. When cooked, reduce the heat
  9. Mix the remaining butter with the flour to make a past and gradually add to the sauce.
  10. Allow to simmering, stirring constantly until the sauce thickens.
  11. Taste and add seasoning if desired before serving.
