
Beef Marinated in Wine (Pressure Cooker) Recipe
Preparation time: 15 minutes
Cooking time: 20 minutes on high pressure
Ingredients:
- 750 grams chuck steak, trimmed of excess fat and cut into 2.5 cm
cubes
- 1 large onion (peeled and sliced)
- 1 clove garlic (peeled and crushed)
- 1/2 teaspoons olive oil
- 300 ml red wine
- 50 grams butter
- 1 tablespoons tomato puree
- 150 ml brown stock
- salt
- freshly ground pepper
- 1 tablespoons plain flour
Directions:
- In a mixing bowl, mix the meat cubes, onion, garlic, thyme,
olive oil and 150 ml red wine. Stir well, cover and marinate for
several hours.
- Melt the butter in a cooker.
- Drain the marinated meat. Set aside the marinade.
- Fry the meat on the butter until lightly brown.
- Mix in the marinade , the remaining half of the wine, tomato
puree and stock.
- Season with salt and pepper stirring well.
- Close the cooker and allow to cook for 20 minutes on high.
- When cooked, reduce the heat
- Mix the remaining butter with the flour to make a past and
gradually add to the sauce.
- Allow to simmering, stirring constantly until the sauce
thickens.
- Taste and add seasoning if desired before serving.
