Bean and Tuna Antipasto

Bean and Tuna Antipasto (Pressure Cooker) Recipe

Preparation time: 10 minutes plus soaking time

Cooking time: 15 minutes on high pressure

Ingredients:

  • 225 grams of haricot beans
  • 900 ml water (cold)
  • 1 large sized onion (peeled and chopped)
  • 1/4 teaspoon dried mixed herbs
  • 3 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • salt
  • freshly ground black pepper
  • 2 grams tuna fish, drained and flaked into large pieces
  • 1 tablespoon chopped fresh parsley
  • 12 black olives, stoned

Directions:

  1. Soak beans in the boiling water for almost an hour and then drain out the excess water
  2. On a cooker, place the beans and add herbs, onions and cold water
  3. Turn the cooker to H pressure and let it cook for 15 minutes. Gently, reduce the pressure.
  4. Remove from the cooker, drain the beans and then chill
  5. Add all the seasonings- vinegar, salt, oil and pepper- to taste
  6. Mix the beans in the dressing then fold it in the parsley, olives and tuna fish
